VG XEOSとは

日立金属で生産されている安来鋼の一つで、白紙二号にタングステンやクロムを添加することによって粘り強くなり，耐摩耗性に優れた高級鋼材。白紙鋼に比べ切れ味が長続きします。

鉄の包丁程は錆びませんが、ステンレスほどの錆びにくさではありません。
